    Satellite‐derived climatologies of UV index (UVI) and erythemal daily dose were determined for Argentina at a geographical resolution of 0.5° latitude by 0.5° longitude. Total Ozone Mapping Spectrometer climatology of key input parameters was used to calculate the clear‐sky ground‐level solar UV irradiance. NASA Surface meteorology and Solar Energy cloud cover data were used to determine the UV attenuation by clouds. Two cases were tested: (1) monthly averages of total cloud cover and (2) monthly averages for three ranges of cloud cover percentage (0–10%, 10–70%, and 70–100%). Case 2, with smaller biases, was selected. Measured erythemal irradiance at seven stations of the Argentine Ultraviolet Monitoring Network was used to validate the satellite‐derived climatologies, as well as to estimate aerosol parameters, surface albedo corrections, and UV cloud transmittance for the calculations. Annual average biases of the monthly mean satellite‐derived UVI and erythemal daily dose with respect to the ground measurements are mostly within ±10%. The strong longitudinal gradient of UV levels toward the Andes Mountains is emphasized. Very high UVI and erythemal daily dose values are registered in the northwestern tropical high‐elevation Andean plateau, with extreme monthly means above 18 and 10 kJ/m 2 respectively, in December–January. Even northern low‐elevation regions show averages over 12 and 7 kJ/m 2 , respectively. On average, clouds attenuate the clear‐sky erythemal irradiance by less than 20% for most of the continental region during all months. UV levels are considerably higher than those for equivalent regions in the Northern Hemisphere.

    Índice de masa corporal y postura plantar: un estudio transversal en niños y adolescentes peruanos

    Objective: Apart from overweight and obesity in children and adolescents, footprint alterations constitute one of the main health concerns for parents. The objective of the study was to evaluate the correlation between body mass index (BMI) and plantar posture in Peruvian children and adolescents. Methods: A descriptive cross-sectional study was carried out in 212 children and adolescents aged between 5 to 18 years. Weight and height were determined. In addition, the body mass index for age (BMI/Age) was calculated according to the recommendations of the World Health Organization (WHO). Likewise, the plantar footprint was obtained and classified into flat foot and pes cavus using the arch index (AI). Data analysis was done using IBM SPSS version 27 statistical software. Results: The highest proportion of women presented alterations in the plantar footprint compared to men, these differences were significant (p <0.05). There was a higher proportion of men who were overweight compared to women (43.2% vs. 32.7). Finally, no statistically significant correlation was found between the BMI/Age and the plantar footprint of the participants (p> 0.05). Conclusion: The results of this study do not show a relationship between footprint and BMI/Age.

    Nutritional needs are an option for various types of functional foods, such as granola based on Andean cereals, thus being a healthy snack alternative. The objective of this article is to calculate, elaborate and analyze mixtures of Andean grains (quinoa, cañihua, kiwicha and oats) fulfilling the protein requirement for an adult. The method used in this research was the PDCAAS, which depends on the protein composition of the flakes. The results obtained in the sensory evaluation according to the acceptability of consumers was sample 4 containing H. quinoa 314 g., H. cañihua 154 g., H. kiwicha 338 g, and H. oats 193 g, the mixtures they contain the necessary amount of essential amino acids according to the reference standard where the minimum and maximum limit of lysine is 45-52 mg/g protein, sulfur amino acids 22-39.36 mg/g protein; threonine 23-30.4 mg/g protein, tryptophan 6-9.84 mg/g protein. The proximal analyzes that were carried out on the different samples gave as a result: Ash (1.7 to 2.1%), Moisture (5-10%), Aw (0.25 – 0.30 aw), Protein (15.4%), Fat (32.2%), fiber (5.2%) and the color influences the different samples. In conclusion, the elaborated granola meets the requirements of the FAO, which was carried out through PDCAAS calculations, obtaining 30 formulations, in which it was optimized, thus leaving 6 formulations for the sensory and physicochemical analyses.

    Adquisición de bienes/servicios y gestión administrativa en la Municipalidad Provincial de Mariscal Nieto, Moquegua, Perú

    Objective. The objective was to determine the relationship between the procurement of goods and services and administrative management in the Provincial Municipality of Mariscal Nieto, Moquegua (Peru). Methods. To achieve this, an applied methodology was used, with a quantitative approach and a non-experimental design. From a population of 50 municipal workers, a sample of 35 was selected by non-probabilistic sampling. The instrument used was a questionnaire composed of 18 items on a Likert-type scale. It was addressed to the workers to know their opinions regarding the development of the administrative management, as well as the acquisition of goods and services. Results. The relationship between administrative management and the acquisition of goods and services is expressed, showing a significance of less than 0.5 and a Spearman's rho value of 0.937, which affirms that the correlation is very high positive. Conclusions. In conclusion, it can be said that administrative management is crucial for the adequate acquisition of goods and services in the Municipality of Moquegua, due to its high degree of correlation.

    Composición proximal y propiedades funcionales del surimi liofilizado de Dosidicus gigas “ calamar gigante”

    The purpose of the research was to determinate proximal composition and functional properties of the giant squid freeze-dried surimi (Dosidicus gigas). Surimi elaborated from giant squid and it lyophilized until obtaining surimi powder to evaluate its characteristics and functional properties. The protein content was 58.7% and carbohydrate 30.5%. Protein solubility in water and salt (3%) were 21.1% and 40.6% respectively, these values being higher than surimi powder of commercial species. The gelling capacity was 2.4% and the emulsifying capacity was 79.9% at a concentration of 1.0%. The color on the Hunter scale was L*: 91.5; a*: 0.5; b*: 7.0. Giant squid powder surimi considered as a functional protein powder due to its percentage protein content, and had good technological characteristics and great potential in the food industry.

    Proximal composition and functional properties of lyophilizated surimi of Dosidicus gigas “jumbo squid”

    El propsito de la investigacin fue determinar la composicin proximal y propiedades funcionales del surimi liofilizado de calamar gigante (Dosidicus gigas). Se elabor surimi a partir de calamar gigante y fue liofilizado hasta obtener surimi en polvo para evaluar sus caractersticas y propiedades funcionales. El contenido de protenas fue 58,7% y carbohidratos 30,5%. La solubilidad proteica en agua y sal (3%) fueron 21,1% y 40,6% respectivamente, siendo estos valores superiores a surimi en polvo de especies comerciales. La capacidad de gelificacin fue 2,4% y la capacidad emulsificante fue 79,9% a una concentracin del 1,

    Morphological characterization by scanning electron microscopy of nanocelluloses of watermelon (Citrullus lanatus) peel

    La cáscara de sandía (Citrullus lanatus) es un residuo agrícola abundante, disponible y muy poco utilizable. Los objetivos fueron aislar la nanocelulosa a partir de la corteza de sandía y obtener sus imágenes de morfología a través de microscopía electrónica de barrido (SEM). Primero, se realizó un tratamiento alcalino con hidróxido de potasio al 5% (p/v); segundo, las fibras fueron blanqueadas con tampón de acetato glacial y clorito de sodio a 80 °C durante 4 horas; y finalmente se realizó la hidrólisis con ácido sulfúrico a diferentes concentraciones (50%, 60% y 70%, v/v) y tiempos de hidrólisis (20, 30 y 40 minutos), a 45 °C en agitación constante. Por último, las nanocelulosas obtenidas fueron observadas a través del SEM. El contenido de lignina, celulosa, hemicelulosa, ceniza y humedad de la harina de cáscara de sandía fueron 10,00 ± 0,48%; 46,00 ± 0,15%; 23,00 ± 0,85%; 15,00 ± 0,26% y 10,30 ± 0,70%, respectivamente. El máximo rendimiento obtenido de nanocelulosa fue 64,96%, a 60% de ácido sulfúrico y 30 minutos de hidrólisis. La morfología de las nanocelulosas se observó mejor a 200 μm que a 100 μm. Las fibras de nanocelulosa estuvieron más expuestas y mejor distribuidas a 200 μm.

    Elevada presencia de enterobacterias con genes de resistencia antimicrobiana en pacientes diagnosticados de COVID-19 en hospitales públicos del Perú

    Objective: To characterize phenotypic and genotypic profiles, and to determine the prevalence of extended-spectrum betalactamases (ESBLs), AmpC, and carbapenemase resistance genesin gram-negative isolates obtained from COVID-19 patients in five health centers in Peru. Materials and methods: A descriptive and retrospective study was conducted, analyzing 78 bacterial isolates from COVID-19 patients collected during 2020. Bacterial identification and interpretation of antimicrobial susceptibility profiles were performed using the MicroScan® system. Detection of resistance genes blaCTX-M, blaTEM, blaSHV, blaAmpC, blaKPC, blaIMP, and blaNDM was conducted using polymerase chain reaction (PCR). Results: Amongst bacterial isolates analyzed, 49 (62.83%) were Enterobacteriaceae, and 29 (37.17%) were non-fermenting gram-negative bacteria (NFGNB). Escherichia coli was the most prevalent species, with 33 isolates (42.30%). Resistance to antibacterials was observed, including cefotaxime, ciprofloxacin, and aztreonam, while most bacteria remained susceptible to ertapenem, colistin, and tigecycline. PCR analysis revealed that the blaCTX-M gene was the most prevalent, detected in 25.64% of isolates (20/78) and distributed across the five hospitals studied. Conclusions: The findings indicate a high prevalence of bacterial resistance genes in the samples studied, with blaCTX-M and blaTEM being most prevalent in Enterobacteriaceae and blaIMP in non-fermenting bacteria. These findings underscore the need to strengthen AMR surveillance in the context of coinfection in COVID-19 patients.
