Item type:Publicación, Mezcla proteica con arándanos (<i>Vaccinium corymbosum</i>), granos andinos y Sacha Inchi (<i>Plukenetia volubilis</i>)(2025-11-10) ;Jerson Alfredo Maguiña DiazSacha inchi es conocida como el maní de los incas, con propiedades nutricionales destacables como los ácidos grasos omegas 3 y 6, además de un alto contenido en proteína (56.61%). Los granos andinos conocidos en todo el mundo como “super foods” contienen aminoácidos esenciales completos, proteínas de alta digestibilidad, y compuestos bioactivos. El objetivo fue elaborar una mezcla proteica con arándanos, harina de quinua (HQ) y harina de kiwicha (HK) y harina de sacha inchi (HSI). Se realizaron 4 formulaciones F1 (5% HSI, 15% HQ, 25% HK), F2 (10% HSI, 10% HQ, 25% HK), F3 (15% HSI, 10% HQ, 20% HK) y F4 (25% HSI, 10% HQ, 10% HK). Se analizó la composición proximal, propiedades fisicoquímicas (pH, acidez, °Brix), índice de estabilidad, humectabilidad, dispersibilidad y atributos sensoriales. Los resultados mostraron un contenido alto de proteína de 20.94% del F4, además de contenidos altos de lípidos de 10.01% a 13.62%, con baja humedad de 5.25%. Los resultados de la evaluación sensorial demostraron la mayor aceptación para el F2 con 8.07 y puntuación del atributo del sabor con un 7.99. Se elabor surimi a partir de calamar gigante y fue liofilizado hasta obtener surimi en polvo para evaluar sus caractersticas y propiedades funcionales. El contenido de protenas fue 58,7% y carbohidratos 30,5%. La solubilidad proteica en agua y sal (3%) fueron 21,1% y 40,6% respectivamente, siendo estos valores superiores a surimi en polvo de especies comerciales. Item type:Publicación, Efecto de Temperatura y Velocidad de Agitación en el Deshidratado Osmótico de Jengibre (Zingiber Officinale)(2022-08-25) ;Nancy Cañazaca Tito ;Judith Carrillo Huamani; El objetivo de esta investigación fue evaluar el efecto de la temperatura y la velocidad de agitación sobre la pérdida de peso (PP%), la pérdida de agua (PA%) y la ganancia de sólidos (GS%) en el deshidratado osmótico de cubos de jengibre (Zingiber officinale). Los parámetros aplicados fueron: temperatura de la solución osmótica 26, 36 y 46°C, velocidad de agitación de 30, 50 y 80 rpm, relación muestra / solución osmótica de 1:16 (p/p), concentración de sacarosa al 60% y tiempo de experimento 0, 15, 30, 45, 60, 75, 90, 105 y 120 min. Los resultados mostraron que la temperatura fue el parámetro que más influyó sobre la PA%, PP% y GS%; en comparación, la velocidad de agitación tuvo una menor influencia sobre la PA%, PP% y GS%; esto indica que las altas temperaturas provocan cambios en la permeabilidad de la membrana celular del alimento, lo que genera mayor transferencia. El tratamiento a 26°C y 30 rpm mostró una mayor difusividad (De) con 5.20 x 10-4. El tratamiento a 46 °C y 30 rpm reportó mayores pérdidas de humedad con un 35%, el tratamiento a 26°C y 30 rpm presentó mayor variación de pH de 6.62 a 5.27, el tratamiento a 36 °C y 50 rpm mostró una acidez constante de 0.05% y el tratamiento a 46°C y 80 rpm presentó una mayor ganancia de sólidos soluble con 35.16 °Brix. Item type:Publicación, Conservación de Pan Artesanal Ezequiel y Pan Superbueno Usando Aceite Esencial de Clavo de Olor (Eugenia caryophillus)(2015-07-16); ;Moisés Quito VidalSócrates Quispe CondoriEl presente trabajo tuvo por objetivo evaluar la vida en anaquel del pan artesanal Ezequiel (CITAL) y pan de molde comercial Superbueno (Productos Unión), usando aceite esencial del clavo de olor (Eu- genia Caryophillus) como antimoho. El aceite esencial fue obtenido por el método de hidrodestilación, con un rendimiento de 15 % (m/m). Del análisis microbiológico del pan Superbueno (pan comercial) se identificaron una cepa de levadura y dos mohos que corresponden al género Penicillium. Del pan Ezequiel se identificaron tres cepas aisladas de mohos, la cepa blanca corresponde al género Penici- llium, y dos cepas de género no identificado. La aplicación del aceite esencial a las seis cepas aisladas fueron a tres concentraciones (1O µl, 12.5 µl y 15 µl). Los resultados mostraron la ausencia de mohos hasta un período de incubación de 57 días. Finalmente, se comparó la efectividad del aceite esencial de clavo de olor con un antimoho comercial (Pangermex, aceite esencial de cítricos), aplicándose en forma de spray al pan Ezequiel. In order to achieve greater productivity, intensive fish cultivation systems are employed, which can cause greater susceptibility to diseases caused by viruses, bacteria, fungi, and parasites. Antimicrobial substances are compounds used in livestock production with the objectives of inhibiting the growth of microorganisms and treatment or prevention of diseases. It is well recognized that the issues of antimicrobial use in food animals are of global concern about its impact on food safety. This paper present an overview of the aquaculture production in the whole world, raising the particularities in Brazil, highlighting the importance of the use of veterinary drugs in this system of animal food production, and address the potential risks arising from their indiscriminate use and their impacts on aquaculture production as they affect human health and the environment. Cerrón-MallquiMiguel Albrecht-RuízThe purpose of the research was to determinate proximal composition and functional properties of the giant squid freeze-dried surimi (Dosidicus gigas). Surimi elaborated from giant squid and it lyophilized until obtaining surimi powder to evaluate its characteristics and functional properties. The protein content was 58.7% and carbohydrate 30.5%. Protein solubility in water and salt (3%) were 21.1% and 40.6% respectively, these values being higher than surimi powder of commercial species. The gelling capacity was 2.4% and the emulsifying capacity was 79.9% at a concentration of 1.0%. The color on the Hunter scale was L*: 91.5; a*: 0.5; b*: 7.0. Among the varieties evaluated were sweet native potato varieties Imilla Negra (Solanum tuberosum spp. Andígena), Imilla Blanca (Solanum tuberosum spp. Andígena), Peruanita, Albina or Lomo (Solanum chaucha), and Sutamari, and the bitter potatoes Rucki or Luki (Solanum juzepczukii Buk), Locka (Solanum curtilobum), Piñaza (Solanum curtilobum), and Ocucuri (Sola-num curtilobum), acquired from the National Institute of Agrarian Innovation (INIA-Puno). The proximal composition, amylose content, and morphological, thermal, and rheological properties that SEM, DSC, and a rheometer determined, respectively, were evaluated, and the data obtained were statistically analyzed using a completely randomized design and then a comparison of means using Tukey’s LSD test. The results show a significant difference in the proximal composition (p ≤ 0.05) concerning moisture content, proteins, fat, ash, and carbohydrates. Thus, the amylose content was also determined, ranging from 23.60 ± 0.10 to 30.33 ± 0.15%. However, residues of these substances in animal products represent a potential risk to consumer health when residue levels are above the established maximum residue limits (MRLs). Fluoroquinolones (FQs) are antimicrobials commonly used worldwide in aquaculture. The aim of this work was to develop and validate a simple analytical method for the simultaneous determination of norfloxacin, danofloxacin, enrofloxacin and ciprofloxacin levels in tilapia (Oreochromis niloticus) and pacu (Piaractus mesopotamicus) fillets using liquid chromatography–tandem mass spectrometry (LC-MS/MS) quadrupole time of flight (QToF). The FQs were extracted from the fillets with 1% acetic acid–methanol and 1% acetic acid–acetonitrile solutions using ultrasonic assistance. The clean-up was performed with hexane. Chromatographic separation was conducted in an XTerra RP18 column (2.1 × 150 mm, 5 µm) at 25 °C with a flow of 0.2 mL min−1. The mobile phase consisted of 0.1% aqueous formic acid and acetonitrile, with gradient elution. The validation parameters for all FQs were linearity (>0.99), intra-day precision (CV of 1%–9%), inter-day precision (CV of 3%–17%), decision limit (63–126 ng g−1), detection capability (76 –152 ng g−1) and accuracy (90%–111%). The limit of quantification was lower than the MRL for each FQ, indicating that the method is suitable for the determination of the FQ levels in the fish fillets.
